Lime broiled fish^

Ingredients

2 | teaspoons | Freshly grated gingerroot |
⅛ | teaspoon | Cayenne pepper |
1 | teaspoon | Apple juice concentrate |

4 | (4oz) boned fish fillets | |

4 | (5 1/2-6oz) fish steaks with bone |
Directions
Combine all ingredients except fish in a shallow bowl. Add fish to lime mixture; marinate at least 1 hour, turning occasionally. Preheat broiler. Place fish on broiler rack. Broil 5 minutes, basting with marinade. Turn carefully; broil 5-7 minutes longer until fish is opague. Makes 4 servings.
