Lime broiled fish^

Ingredients

Quantity Ingredient
1 teaspoon Dijon mustard, no salt added
¼ cup Fresh lime juice
2 teaspoons Freshly grated gingerroot
teaspoon Cayenne pepper
1 teaspoon Apple juice concentrate
dash Pepper
4 (4oz) boned fish fillets
OR
4 (5 1/2-6oz) fish steaks with bone

Directions

Combine all ingredients except fish in a shallow bowl. Add fish to lime mixture; marinate at least 1 hour, turning occasionally. Preheat broiler. Place fish on broiler rack. Broil 5 minutes, basting with marinade. Turn carefully; broil 5-7 minutes longer until fish is opague. Makes 4 servings.
