Low-fat cucumber ranch dressing

Ingredients

1 small Cucumber
2 cups Non-fat yogurt
3 teaspoons Sugar
1 Garlic clove, chopped
½ teaspoon Chopped fresh thyme leaves
teaspoon Chopped fresh oregano leaves
teaspoon Salt
½ teaspoon Black pepper
1 tablespoon Fresh lemon juice

Directions

Seed the cucumber, but do not peel. Puree in a food processor or blender. (You may want to add a half cup of the yogurt to make it easier for the machine to process the cucumber). Combine with the remaining yogurt, sugar, garlic, thyme, oregano, salt, pepper and lemon juice. Stir to thoroughly blend all ingredients, and taste for seasoning. Serve immediately.

Per 2-tablespoon serving: 16 calories, 1 gram protein, 3 grams carbohydrates, trace fat, trace saturated fat, trace cholesterol, 177 milligrams sodium.
