Sour cream cucumber dressing

Ingredients

½ | medium | Cucumber |
1 | cup | Dairy sour cream |
2 | tablespoons | Lemon juice |
1 | teaspoon | Sugar [opt'l] |
½ | teaspoon | Salt [opt'l] |
1 | teaspoon | Dill; fresh, chopped OR |
½ | teaspoon | Dried dill |
1 | teaspoon | [or more] grated onion |
1 | dash | Hot pepper sauce |
Directions
Halve the cucumber lengthwise, removing the seeds and then cut the cucumber in pieces. Add to a blender containing all of the rest of the ingredients and blend in short bursts until the cucumber is finely chopped. (When necessary, stop the blender and use a rubber spatula to scrape down the sides.) Refrigerate at least one hour to chill and allow flavors to blend before using.
Makes 1¾ cups.
