Low-fat hollandaise sauce

tablespoon Cornstarch
½ teaspoon Dry mustard
cup 1% low-fat milk
2 tablespoons Egg substitute
tablespoon Lemon juice
2 teaspoons Margarine
teaspoon Salt
Paprika (opt)

Directions

Combine the cornstarch and mustard in a 2-cup glass measure.

Gradually add milk and egg substitute, stirring with a wire whisk until blended. Microwave on high 1 minute; stir well. Microwave on high for an additional 1« minutes or until thickened, stirring every 30 seconds. Add the lemon juice, margarine and salt. Sprinkle with paprika if desired.
