1 | tablespoon | Olive oil |
1 | tablespoon | Minced fresh parsley |
½ | teaspoon | Fresh lemon juice crumbled |
¼ | teaspoon | Freshly ground pepper |
2 | tablespoons | Fresh orange juice |
1 | tablespoon | Tomato paste |
1 | Garlic clove, minced | |
¼ | teaspoon | Dried oregano, |
4 | Thick swordfish steaks |
Directions
In a bowl, whisk together the soy sauce, orange juice, oil, tomato paste, parsley, garlic, lemon juice, oregano & the pepper until the marinade is combined well. Put swordfish in a shallow dish large enough to hold it in one layer, pour the marinade over it, and let the swordfish marinate, covered, turning it once, for 1 hour. Remove the swordfish from the marinade & broil it on the rack of a broiler pan under a preheated broiler about 5 inches from the heat for 4-5 min. on each side, or until it is just firm to the touch.
Alternatively, remove the swordfish from the marinade and grill it on an oiled rack over glowing coals for 4-5 min on each side, or until it is just firm to the touch.
