Marmalade and honey muffins

2 Eggs; beaten
85 millilitres Sunflower oil; (3fl oz)
225 grams Plain flour sifted; (8oz)
150 millilitres Milk; (1/4 pint)
1 tablespoon Baking powder
½ teaspoon Salt
2 tablespoons Runny honey
3 tablespoons Marmalade

Directions

Whisk together the eggs, oil, milk and honey. Sift the flour, salt and baking powder and make a well in the centre and pour in the egg mixture.

Mix together gently but thoroughly.

Spoon half the mixture into muffin cases set in muffin tins. Spoon 1 tsp marmalade on top of each. Top with the remaining mixture ensuring the marmalade is covered.

Bake at 200øC/400øF/gas mark 6 for 20 minutes until well risen and golden brown.
