Mock oyster stew

Ingredients

⅓ | cup | Oil |
6 | eaches | Salsify, cut in 1/2 inch pieces (about 6 cups) |
1 | large | Onion, chopped |
½ | cup | Celery, chopped |
¼ | cup | Whole wheat flour |
6 | cups | Milk |
2 | tablespoons | Kelp powder |
1 | teaspoon | Celery greens, chopped |
Salt to taste |
Directions
Place oil in a large skillet. Add salsify and brown. Stir in onion and celery and simmer for 10 minutes. Stir in flour. Gradually add milk, stirring well. Simmer for 15 minutes.
