New potatoes with black pepper gravy

Ingredients

1 | pounds | Small new potatoes |
2 | tablespoons | Margarine |
½ | cup | Chopped onion |
2 | tablespoons | All purpose flour |
1 | cup | Soy milk |
½ | teaspoon | Salt |
½ | teaspoon | Coarsely ground black peppercorns |
Directions
BLACK PEPPER GRAVY
Place potatoes in a saucepan, cover with water & bring to a boil.
Cook until tender, about 8 to 15 minutes. Drain & set aside.
GRAVY: In a skillet, melt the margarine, add the onions & saute until soft. Sprinkle over the flour & cook, stirring constantly, over medium heat, for 1 minute.
Add soy milk & cook until thickened, about 2 minutes. Stir in the salt & pepper. Pour sauce over potatoes & serve immediately.
