Orange poppy seed dressing

¾ | cup | 10X Sugar; sifted after measure |
1 | tablespoon | Dry mustard |
2 | teaspoons | Kosher salt |
¾ | cup | Cider vinegar |
2 | tablespoons | Onion; brunoise |
2 | cups | Salad oil |
¼ | cup | Orange concentrate; thawed |
1½ | Orange zest | |
1 | teaspoon | Tabasco sauce |
1 | tablespoon | Poppy seeds |
Directions
1. Combine sugar, mustard, salt, & vinegar. Heat over double boiler to dissolve sugar.
2. add onion.
3. Place mixture in a blender and add oil slowly to emulsify.
4. add remaining ingredients to dressing and mix well.
NOTES : YIELDS 1 QUART
