Oyster stew - country living holidays

Ingredients

2 pints Fresh oysters
4 tablespoons Butter or margarine
¼ cup Flnely chopped peeled onion
Worcestershire sauce
Tabasco sauce
Pepper
pint Heavy cream
6 cups Milk
Paprika

Directions

1. Drain oysters, reserving liquid.

2. Heat butter or margarine in a large heavy pan over moderate heat.

Add onion and cook until soft. Add oysters and cook until edges begin to curl.

3. Add a few dashes of Worcestershire, Tabasco and pepper. Then add cream, milk and oyster liquid.

4. Heat over moderately low heat until stew is hot and bubbles form around the edges of pot. Do not boil. Taste and add more seasoning if needed.

5. Serve in heated soup plates. Sprinkle with paprika and, if desired, add a thin sliver of butter or margarine to the top of each serving. This is oystery stew; more milk and cream may be added.
