Pear, provolone and rocket salad

2 tablespoons Fresh basil
¼ pint Champagne vinaigrette
6 Thin slices Comice pear; (6 to 8)
7 Strips provolone cheese; approx 2 x 1/2 inch

½ pint Mild olive oil
fluid ounce Champagne vinegar
¼ pint Champagne
Salt and ground black pepper
Sugar if required

Directions

CHAMPAGNE VINAIGRETTE

Whisk the vinaigrette ingredients together adding sugar if necessary.

Toss the rocket and herbs with half of the vinaigrette. Top with the pear and cheese and drizzle with the remaining vinaigrette.
