Pine nut-pesto couscous

3 | Plum tomatoes | |
2 | Green onion(s) | |
2 | tablespoons | Pine nuts |
3 | tablespoons | Prepared pesto sauce |

Directions
1. In a covered medium saucepan, bring 1 cup of water to a rolling boil over high heat. Add the couscous and ½ tsp salt, stir well and remove from the heat. Cover and let stand for at least 5 min.
2. Meanwhile, chop the tomatoes in to small pieces. Cut the green onions crosswise into thin slices. Toast the pine nuts in a small frying pan over medium heat, stirring often, until lightly browned, about 3 min.
3. Fluff the couscous with a fork. Add the pesto and toss. Add the tomatoes, green onions, and pine nuts. Season with salt and pepper to taste and toss well.
