Warm turkey salad

Ingredients

1 225 gram pac turkey stir-fry
100 grams Smoked streaky bacon; cut into strips
1 pack Kumquats or 100g/4oz loose bought -

25 grams Unsalted butter
Olive oil
2 Cloves garlic; crushed
1 tablespoon White wine vinegar
2 tablespoons Freshly squeezed orange juice
1 tablespoon Chopped chives
1 pack Rocket
1 pack Mixed herb salad
2 Thick cut slices brown bread; cut into 1cm/1/2\"
; croutons
2 tablespoons Sherry vinegar
1 teaspoon Grain mustard
4 tablespoons Good olive oil
1 tablespoon Walnut oil

Directions

FOR THE DRESSING

1 Heat the butter and oil in a frying pan. Add the garlic and cook for a few minutes. Add the bacon, cook for five minutes. Follow with the turkey strips.

2 Add the halved kumquats and then the wine vinegar, orange juice and chives. Heat through. In a separate pan cook the croutons in olive oil until golden brown.

3 Place all the dressing ingredients in a screw-topped jar or in a mixing bowl and whisk or shake together. Taste and adjust the seasoning as necessary.

4. Spoon the turkey and bacon mix over the top and scatter with croutons.

Drizzle the dressing over just before serving.
