Pork with cashew nuts

1 pounds Pork Loin -- thinly sliced
1 cup Broccoli Flowerets
1 Carrot -- shredded
3 Scallions, Split & Cut In 1\"

2 slices Ginger -- minced
2 teaspoons Soy Sauce
2 teaspoons Sherry
1 tablespoon Soy Sauce
1 teaspoon Cornstarch

½ cup Bamboo Shoots. Thin Sliced
And -- cut in 1/2\" strips
1 cup Unsalted Roasted Cashew
Nuts
4 tablespoons Oil
1 Clove Garlic -- minced
2 teaspoons Cornstarch
½ teaspoon Sugar

Directions

1. Marinate the pork slices.

2. Heat the wok and add 2 Tbs of the oil.

3. When the oil begins to smoke add the ginger and garlic, stirring only a few seconds.

4. Add the broccoli and carrots. Stir-fry for 1 min and add the bamboo shoots. Stir-fry briefly, and then lower the heat slightly. Cover the wok and cook the vegetables for 2 mins. Then remove them from the wok.

5. Add the remaining 2 Tbs oil to the wok. Again turn the heat to high and stir-fry the pork until it loses its pink color.

6. Return the vegetables to the wok, adding the mixed sauce and the scallions. Stir until it is thickened.

7. Mix in the cashew nuts and serve.
