Rice stuffed tomatoes

Ingredients

Quantity Ingredient
2 cups Cooked rice
1 tablespoon Olive oil
¼ cup Onion -- chopped
80 millilitres Garlic; roasted -- minced
¼ cup Green peppers -- chopped
2 tablespoons Parsley -- minced
¼ cup Pulp from tomatoes
4 Tomatoes
2 tablespoons Parmesan

Directions

Slice tops off of tomatoes. Remove pulp and saute in oil with onions, garlic and peppers. Toss with rice, salt and pepper. Stuff tomatoes. Put tomatoes in a pan, pour a little wine and water in bottom. Bake 15 minutes at 350~.
