Roasted red & yellow potatoes

2 pounds Red potatoes, med-sized
Thin-skinned; quartered
3 smalls Sweet potatoes or yams cut lengthwise in 1\" stri
3 mediums Onions; quartered
3 tablespoons Olive oil
Salt and pepper
Sherry or cider vinegar optional

Mix red potatoes, sweet potatoes, onions, and oil. Spread mixture evenly on a large rimmed baking sheet. Bake in a 425 F oven until vegetables are tender and browned (about 55 mins).

Transfer to a serving dish and season to taste with salt and pepper.

Sprinkle with vinegar, if desired. Make 6 servings.
