Roasted red bliss potatoes

1 | pounds | Red bliss potatoes |
¼ | cup | Extra virgin olive oil |
1 | Head garlic broken into cloves and peeled | |
Salt and freshly ground black pepper | ||
¼ | cup | Water |
¼ | cup | Freshly grated parmesan cheese |
2 | tablespoons | Chopped parsley |
Directions
Preheat oven to 400 degrees F. Scrub the potatoes well and cut them in half. In a bowl combine the potatoes with the olive oil, garlic, salt and pepper, tossing to coat. Arrange the potatoes in a roasting pan in a single layer and sprinkle with ¼ cup water. Roast the potatoes for 45 minutes or until the potatoes and garlic are tender and golden brown. In a serving bowl toss the potatoes and garlic with the Parmesan and parsley.
