Salmon patty sandwiches

Ingredients

1 Egg; slightly beaten
1 can (15-1/2 oz.) salmon; drained and flaked
4 Green onions; (with tops), chopped
¼ cup Cracker crumbs
1 tablespoon Lemon juice
½ teaspoon Salt
¼ teaspoon Black pepper
2 tablespoons Margarine or butter
4 Hamburger buns; split and toasted
4 slices Process American cheese
Lettuce leaves
1 Tomato; sliced
¼ cup Tartar Sauce; (recipe follows)

Mix egg, salmon, onions, cracker crumbs, lemon juice, salt and pepper.

Shape into 3 patties, each about ½" to ¾" thick. Heat margarine in 10" skillet over medium heat until melted. Cook patties in margarine until golden brown, about 5 minutes on each side.

Combine 1 cup mayonnaise or salad dressing, 2 tablespoons finely chopped dill pickle, 1 tablespoon snipped parsley, 2 teaspoons chopped pimiento, and 1 teaspoon grated onion; mix well. Cover and refrigerate until chilled.

Makes about 1 cup sauce: 100 calories per tablespoon.

Place a patty on each of 4 bun halves. Top each with cheese slice, lettuce, tomato, Tartar Sauce and remaining bun half. Makes 4 sandwiches.
