Scallops with chilli and lime sauce

Ingredients

185 grams Green beans; chopped
185 grams Snow peas
¼ cup Dry white wine
500 grams Scallops
3 tablespoons Olive oil
2 tablespoons Lime juice
2 tablespoons Red wine vinegar
1 tablespoon Fresh dill; finely chopped
1 teaspoon Chilli paste
Freshly ground black pepper; to taste

Directions

LIME SAUCE

1. Steam or microwave beans and snow peas until just tender. Drain. Refresh under cold running water. Drain again and set aside.

2. Place wine and scallops in a saucepan. Cook for 3 minutes or until scallops just turn opaque. Using a slotted spoon, remove scallops and set aside.

3. To make sauce, place oil, lime juice, vinegar, dill, chilli paste and black pepper to taste in a screw top jar. Shake well to combine.

4. Arrange beans, snow peas and scallops on a serving platter or individual plates and spoon sauce over.
