Spiced sugared nuts

Ingredients

2 cups Pecans, walnuts, almonds or
Peanuts -Choose one
cup Water
¼ cup Karo light corn syrup
1 cup Sugar
1 teaspoon Ground Cinnamon
¼ teaspoon Ground allspice
¼ teaspoon Salt
1 teaspoon Vanilla
Non stick cooking spray

Directions

Spray 13 x 9 x 2 inch baking pan with cooking spray. Add nuts. Place in 250 degree oven while preparing coating. Watch carefully - do not overcook or burn.

In two quart saucepan combine sugar, water, corn syrup, cinnamon, allspice and salt. Stirring constantly bring to a boil over medium heat. Stirring occasionally, cook until temperature on candy thermometer reaches 236 degrees or until a small amount of mixture dropped into very cold water forms a soft ball which flattens on removal. Remove from heat.

Add nuts and vanilla. Stir until nuts are completely coated. Return nuts to baking pan. Working quickly with two forks, separate nuts into individual pieces.

Cool completely. Store in airtight container.
