Spicy chile oil dressing

Ingredients

3 | tablespoons | Sesame oil |
3 | tablespoons | Vegetable oil |
2 | smalls | Dried hot chiles |
(or 1/2 teaspoon red chile flakes) | ||
3 | tablespoons | Coarsely-chopped fresh ginger |
3 | tablespoons | Chopped scallions |
⅓ | cup | Soy sauce |
1½ | tablespoon | Sugar |
¼ | cup | Rice wine vinegar |
Directions
Heat the oils until smoking and add the chiles, ginger and scallions. Cover and remove from heat and allow to cool to room temperature. Strain the oil, pressing hard on seasonings, and then discard them. Mix the oil with the remaining ingredients, stirring to dissolve sugar.
