Spinach and onion pizza

2 tablespoons Olive oil
20 Milliliters garlic, sliced thin
1 Onion -- sliced
½ teaspoon Salt
¼ teaspoon Pepper
10 ounces Fresh spinach -- chop coarse
cup Mozzarella; shred -- divide
1 12\" pizza crust

Directions

Preheat oven to 450~. Heat oil, add garlic and cook, stirring frequently, until golden, 4 to 5 minutes. Discard garlic. Add onion, salt and pepper; cook until golden and tender. Stir in spinach; cook, stirring, until spinach is wilted and liquid is evaporated. Sprinkle ¾ c mozzarella over crust; top with veggie mixture. Sprinkle with ¾ c cheese. Bake 10 minutes. VARIATION-Broccoli Rabe and Red Pepper Pizza-Prepare and bake pizza as directed but substitute 1 bunch broccoli rabe, tough stems removed and coarsely chopped, for spinach. Cook, stirring frequently, until tender-crisp. Sprinkle half the cheese over crust; top with broccoli mixture and half of 1 7oz jar roasted red peppers, sliced thin; sprinkle with cheese.
