Split pea hummus

Ingredients

1 cup Dried green split peas
½ cup Tahini
1 tablespoon Olive oil
cup Lemon juice
2 Garlic cloves; minced
teaspoon Dried mint
4 tablespoons ;water

Directions

Cook the split peas in 3 cups of water for 45 to 60 minutes on the stovetop, or 8 to 12 minutes in a pressure cooker.

Place all ingredietns in a food processor and blend until smooth and creamy, adding enough water to achieve desired consistency. Yields: 2½ cups.

Serve at room temperature.
