Squid pasta sauce with white wine

3 | pounds | Squid, cleaned and cut into rings |
½ | cup | Dry white wine |
½ | cup | Chicken stock |
4-8 Cloves Garlic, minced | ||
2 | tablespoons | Parsley, chopped |
2-3 T Vegetable oil |
Directions
Saute garlic in oil in a large, heavy frying pan over low heat until lightly browned. Add whit wine, stock and parsley. Simmer until sauce is reduced by a ⅓. Turn up heat to a moderate boil. Add squid and cook for 3 minutes. Serve over spinach fettucine or other thick pasta.
