1 | Endive or head of lettuce | |
2 | pounds | Potatoes; peeled |
½ | pounds | Smoked bacon; diced |
3 | mediums | Onions; chopped |
½ | cup | Water |
Salt & pepper to taste |
Directions
Boil potatoes in salted water. Cut endive in small, longish pieces. Fry bacon & onion until golden brown. Mash potatoes, add half of bacon mixture & the water. Add endive & mix; salt & pepper to taste. At serving time, top with remaining bacon mixture.
