Succotash vinaigrette

Ingredients

Quantity Ingredient
1 cup Frozen corn kernels
1 teaspoon Dijon mustard
1 each « tbls. balsamic or good red wine vinegar
1 tablespoon Olive oil
2 cups Cooked dried lima beans
¬ cup finely diced red onion
¬ cup diced red bell pepper
Salt and pepper to taste

Directions

Cook corn till tender about 5 to 6 minutes. Meanwhile, whisk together the mustard and vinegar. Slowly add oil to the mixture while whisking. Toss with lima beans, corn, onion and red pepper. Sprinkle with salt and pepper. Cool before serving. From "Bean Power" by Tamara Holt AR/95
