Sweet and sour chicken <mom's>

Ingredients

2 Chicken breasts, split
And boned
Flour
1 small Can pineapple chunks
Water
1 cup Sugar
2 tablespoons Corn starch
cup Oil
Salt
Pepper
1 tablespoon Soy sauce
¼ teaspoon Ginger
1 Chicken bouillon cube
Green pepper

Directions

JUICE

Wash chicken breasts and pat dry. Coat with flour. Heat oil in skillet, add chicken and brown on all sides. Place in shallow roasting pan and sprinkle with salt and pepper.

Preheat oven to 350.

Drain can of pineapple chunks, saving juice. Pour juice into 2c measure and add enough water to make 1¼ cups. Pour into medium saucepan and add sugar, corn starch, soy sauce, ginger and bouillon cube. Bring to a boil, stirring constantly until smooth. Boil for 2 minutes. Pour over chicken.

Bake uncovered 30 mins. Add pineapple chunks and 1 large green pepper cut into strips. Bake 30 mins more.
