Sweet and sour sauce chinese style

1 | clove | Garlic; crushed or finely chopped |
1 | each | Onion; finely chopped |
1 | tablespoon | Oil |
6 | tablespoons | Chicken stock |
1½ | tablespoon | Wine vinegar |
1½ | tablespoon | Sugar |
1½ | tablespoon | Soy sauce |
2 | teaspoons | Tomato paste or ketchup |
2 | tablespoons | Sherry wine |
1½ | tablespoon | Cornstarch |
Salt | ||
Freshly ground black pepper | ||
1 | teaspoon | Chinese chili sauce (opt'l) |
Directions
Fry the garlic in the oil until soft but not colored. Add the stock and the next five ingredients. Blend the cornstarch to a paste with ¼ cup water and stir in. Cook for 1 minute. Taste and season, adding the chili sauce if wished.
