Sweet lime salsa

¼ | cup | Sugar |
1 | tablespoon | Water |
1 | cup | Lime Juice |
2 | smalls | Limes; thinly sliced |
2 | teaspoons | Caribbean Jerk Spice |
2 | teaspoons | Rice Wine Vinegar |
Directions
Put the sugar and water in a small saucepan over moderate heat. Cook until the sugar caramelizes to a light golden brown. Carefully add the lime juice, limes, jerk spice and rice wine vinegar. Cook over a low heat for 15 minutes. Cool and serve at room temperature.
