Tomatoes with basil, peppers and blue cheese

Ingredients

Quantity Ingredient
3 Tomatoes; coarsely chopped
½ Onion; chopped
1 Pepper, hot or sweet; chopped
4 Basil leaves; chopped
½ cup Blue cheese; crumbled
2 tablespoons Red wine vinegar
3 tablespoons Olive oil
Salt and pepper; to taste

Directions

Put vegetables in bowl. Mix dressing ingredients and pour over vegetables.

Chill in refrigerator for at least one hour.

NOTES : This salad can be varied by using differnet cheeses, feta,, mozerella, jack, brie all work as well as the blue varieties. Alos you can try different vinegars or oils. Sometimes I use the garlic herb vinegar that

I made. Also try differnet oils. Erin ate dinner at our house and asked her mother to make this salad. They liked it with a mildly hot banana pepper. We alos prefered it that way.
