Tropical shrimp salad

Ingredients

1 | pounds | Large shrimp; shelled, deveined, |
½ | cup | Celery; diced |
1 | small | Onion; chopped |
2 | Green onions (tops included); sliced thin | |
2 | tablespoons | Flaked coconut |
2 | tablespoons | Fresh lemon juice |
⅓ | cup | Mayonnaise; (more if you like) |
½ | teaspoon | Curry powder; or to taste |
Salt & fresh ground black pepper; to taste | ||
2 | teaspoons | Fresh dill; chopped |
Directions
Place shrimp in boiling salted water and remove after 5 minutes. Allow them to cool. Add all other ingredients, mix well. Serve chilled on bed of lettuce. Garnish with sliced tomatoes. Makes 3 to 4 servings.
