Tutti-fruity chicken kabobs

½ | cup | Honey |
1 | tablespoon | Peeled and chopped fresh gingerroot |
1 | tablespoon | Soy sauce |
4 | Boneless skinless chicken breast halves; cut | |
In 1 in cubes | ||
½ | Fresh peeled and cored pineapple; cut in 1 in | |
2 | Oranges; peeled, quartered, | |
; cut in 1 in cubes | ||
Hot cooked rice | ||
Seedless red and green grapes; for garnish |
Directions
In large bowl combine oil, honey, ginger, and soy sauce. Remove ¼ cup and reserve. Place chicken in marinade, stirring to coat. Cover and refrigerate for 3 hours.
Heat grill or broiler. Thread chicken, pineapple and oranges onto skewers.
Cook about 5 minutes. Baste with reserved marinade and turn. Cook 5 minutes, or until chicken is no longer pink in center. Serve with rice and garnish with grapes.
