Baked halibut with herbed dressing and egg mustard sauce

Ingredients

2 cups Dried bread crumbs
¼ cup Chopped parsley
1 teaspoon Salt
teaspoon Pepper
½ teaspoon Sage
½ teaspoon Rosemary
¼ cup Butter
½ cup Chopped onion
¾ cup Chopped celery
2 tablespoons Vinegar
2 tablespoons Water
EGG MUSTARD SAUCE
2 slices Lean bacon
1 Thick halibut steak (2 lb)

Directions

Combine bread crumbs, parsley, salt, pepper, sage & rosemary: set aside. Melt butter; add onion & celery, sauteeing until tender. Add vinegar & water; heat. Pour liquid over bread crumbs & toss lightly.

Place mixture in bottom of greased baking dish; place fish on dressing & top with bacon. Bake, uncovered, in 350 oven for 40 minutes. Serve with Egg Mustard Sauce.
