Beet fritters

Ingredients

Quantity Ingredient
2 cups Grated raw beets
¼ cup Onion, diced
½ cup Bread crumbs
1 large Egg, beaten
¼ teaspoon Ginger
Salt and pepper to taste

Directions

Mix all ingredients. Spoon out pancake sized portions onto a hot, oiled griddle. Cook until brown, turning once. Serve topped with butter, sour cream, yogurt, or any combination of these. Serves 6-8.

NOTE: Turnips or rutabagas can be substituted for or mixed with beets. Also a little hot pepper can be added if desired.
