4 mediums Carrots, shredded
1 tablespoon Chopped fresh parsley
1 tablespoon Basil
1 tablespoon Scallions
3 tablespoons Lemon juice
2 tablespoons Safflower oil
Salt & pepper

Directions

Combine all ingredients in a mixing bowl, toss & serve.
