Cool cucumber dressing

Ingredients

Quantity Ingredient
½ cup Shredded cucumber; peeled, seeded
½ teaspoon Salt
cup Nakano natural rice vinegar
cup Nonfat plain yogurt
1 tablespoon Honey
1 tablespoon Snipped fresh dill weed
¼ cup Mayonnaise (optional)

Directions

Let cucumber tossed with salt stand in a sieve for 15 minutes to drain liquid. Stir together ingredients. Pour on tomatoes or add ¼ cup mayonnaise and toss with chilled cooked potato cubes and sliced onion.

Serves 8.
