Cucumber salad with sun dried tomatoes

Ingredients

Quantity Ingredient
8 cups Sliced cucumbers
½ teaspoon Salt
1 teaspoon Dried basil
½ cup Plain yogurt
2 Whole oil packed sun dried tomatoes; slivered
Pepper to taste

Directions

Combine cucumbers with salt and toos to mix. Place in collander and weight with a heavy object for about 30 minutes, so cukes drain well. Toss all ingredients, season with pepper to taste and serve immediately.

NOTES : Salting the cucmbers will keep them extra crisp. It also prevents the salad from gettin watery. Use a jar filled with water and place on top of a plate to weight cucumbers. Leave over a bowl, or place so they may drain.
