Easy garden bake

Ingredients

1 cup Zucchini; chopped
1 cup Tomato; chopped
½ cup Onion; chopped
cup Grated parmesan cheese
1 cup Milk
½ cup Bisquick® baking mix
2 Eggs
½ teaspoon Salt
¼ teaspoon Pepper

Directions

Heat oven to 400. Lightly grease square baking dish, 8x8x2 inch. or pie plate, 9x -11/4 inch. Sprinkle zucchini, tomato, onion and cheese evenly in pie plate. Beat remaining ingredients in blender on high speed 15 sec., with hand beater 1 min. or until smooth. Pour evenly in dish. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 min.

before cutting.

EASY CHICKEN-GARDEN BAKE: Add 2 cans (5 oz. each) chunk chicken, drained, or 1 cup cut-up cooked chicken with the vegetables.

High Altitude: Bake about 50 min. For Easy Chicken-Garden Bake, use pie plate, 10x1-½.
