Grapenut omelet

Ingredients

½ cup Grapenuts
2 tablespoons Chopped onion
2 tablespoons Chopped green pepper
2 tablespoons Chopped parsley
cup Cooked tomatoes
3 tablespoons Water
2 tablespoons Melted shortening
3 eaches Eggs
4 tablespoons Grated cheese
1 tablespoon Butter or butter substitute
Salt and pepper
Combine shortening, onion, green pepper, and parsley. Brown

Directions

slightly. Season to taste. Add tomatoes. Simmer 15 minutes. Beat eggs until foamy. Add water. Fold into first mixture. Season to taste. Melt butter in hot frying pan. Pour in omelet mixture. Cook over slow fire until firm. When it is nearly set, sprinkle grapenuts and cheese over top. Continue cooking until firm to the touch. Fold.
