Lemony fish croquettes

375 | grams | Cod or haddock fillet; cooked, skinned and |
; flaked (12oz) | ||
2 | tablespoons | Freshly chopped parsley |
Grated rind and juice of 1/2 lemon | ||
2 | Eggs; size 3 | |
Salt and freshly ground black pepper | ||
25 | grams | Plain flour; for shaping (1oz) |
125 | grams | Fresh wholemeal breadcrumbs; (4oz) |
Oil for frying | ||
Lemon wedges and tartare sauce |
Directions
TO SERVE
Mix together the potato, fish, parsley, lemon, 1 egg yolk and seasoning to taste. Chill the mixture for easier handling.
Shape the mixture into 8''sausage'' shapes using well floured hands.
Beat together the remaining egg and egg white and use to coat the shapes.
Coat evenly with the breadcrumbs, then fry in batches in a little oil for 6-8 minutes, turning occasionally until crisp and golden. Drain on kitchen paper and serve immediately with lemon wedges and tartare sauce.
