Macaroni salmon molds

6 Servings

Ingredients

Quantity Ingredient
1 cup Parmesan cheese, grated
½ cup Dry breadcrumbs
cup Cooked small macaroni
3 tablespoons Butter, cut in small pieces
2 Eggs, lightly beaten
2 cups Mozzarella cheese, shredded
4 ounces Smoked salmon
1 tablespoon Butter
1 tablespoon Flour
1 cup Heavy whipping cream
3 tablespoons Dry white wine
Lime slices, parsley and red strips, for garnish

Directions

Spray 6 molds or small custard cups with cooking oil. Mix half the Parmesan with the breadcrumbs and use some to coat the molds. Mix the macaroni, butter and remaining Parmesan. Divide the egg among the molds.

Add layer of macaroni and half of the mozzarella. Add the smoked salmon, macaroni, remaining mozzarella and breadcrumb mixture. Place the molds in 1¼ inches of hot water in a baking pan. Bake at 350F for 20 minutes or until set. Melt the butter for the sauce, stir in the flour and gradually add the cream. Bring to a boil, stirring well, until thickened. Spoon the sauce onto serving plates. Loosen the molds and turn out onto the sauce.

Garnish and add additional smoked salmon, if desired. Serves 6 Typed in MMFormat by cjhartlin@... Source: Holiday Mix N Match Meals.
