Maple syrup and cherry muffins

Ingredients

Quantity Ingredient
½ cup Margarine
¼ cup Maple syrup
2 Beaten eggs
1 teaspoon Vanilla essence
1 Lemon; rind & juice of
1 cup Low-fat yoghurt
1 cup Flour
1 teaspoon Cinnamon
1 cup Wholemeal flour
2 teaspoons Baking powder
1 cup Chopped cherries
12 Whole cherries (optional)

Directions

Preheat oven to 400øF, prepare pans. Blend the margarine & syrup thoroughly. Beat in the eggs followed by the lemon rind & juice, vanilla & yoghurt. Gently fold in the previously mixed dry ingredients then the chopped cherries, do not overmix. Spoon into pans, top with whole cherries if desired, bake for 20 mins or until cooked. Makes 12. 203 calores per muffin.
