Minnie pearl's anykind fruit pie

Ingredients

1 | cup | All-Purpose Flour |
½ | cup | Sugar |
1 | teaspoon | Baking Powder |
¼ | teaspoon | Salt |
1 | cup | Milk |
2 | teaspoons | Vanilla Extract |
4 | tablespoons | Butter, melted |
2 | cups | Lightly Sweetened Fresh |
Fruit | ||
OR- | ||
Canned Fruit, drained |
Directions
* Preheat oven to 400 F.
1. Sift together the flour, sugar, baking powder and salt. Add the milk and vanilla and mix until smooth.
2. Melt the butter in an 8- or 9-inch pie plate. Pour on the batter but DO NOT MIX. Top with fruit. 3. Bake in center of oven for 10 mins. Lower temperature to 350 F.
Bake about 50 mins longer, until the pie bubbles and the crust is lightly browned.
NOTE: The batter will rise up through the fruit and make a crust.
Blueberries make an especially grand pie according to Minnie.
