Nw bartlett pear and sweet pepper salad

1 Red NW Bartlett pear; cored and sliced
1 Yellow NW Bartlett pear; cored and sliced
1 small Green and yellow or red peppers; sliced
4 ounces Sliced ham; cut into 1-inch

2 tablespoons Vegetable oil
2 tablespoons Lemon juice
1 tablespoon Water
1 tablespoon Chopped chives
1 teaspoon Dijon-style mustard
1 teaspoon Sugar
1 teaspoon Salt
Pepper to taste
2 tablespoons Parmesan cheese; grated

Directions

PARMESAN DRESSING

Arrange lettuce, pears, peppers and ham on serving plates. Drizzle with Parmesan Dressing just before serving.

*Sliced turkey, chicken, or smoked salmon can be substituted.

Parmesan Dressing: Combine oil and lemon juice, water and chives, mustard and sugar and salt and pepper; mix well. Stir Parmesan cheese. Makes about ⅓ cup
