Oat bran muffins^ (for weight reduction only)

Ingredients

Quantity Ingredient
cup Lowfat buttermilk
¼ cup Water
¼ cup Egg Beaters
2 tablespoons Barley malt or brown rice
Syrup
2 tablespoons Apple juice concentrate
2 tablespoons Crushed pineapple,
Unsweetened
Carrot, finely grated
½ teaspoon Orange or lemon extract
½ cup Whole wheat flour
cup Wheat bran
2 tablespoons Oat bran
½ teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Ground cinnamon

Directions

Preheat oven to 375F. Spray 12 muffin cups with pam and set aside.

Combine wet ingredients in one bowl and dry in another. Combine.

Spoon into muffin cups. bake until golden brown and a toothpick inserted in center comes out clean, about 20 minutes.
