Peach pickles

4 | pounds | Ripe, firm peaches |
Boiling water | ||
4 | cups | White sugar |
2 | cups | White vinegar |
2 | Cinnamon sticks, broken up | |
20 | Whole cloves |
Directions
Dip peaches into boiling water for 30 seconds. Then plunge immediately into ice cold water. Peel the skin off. Pit and cut peach into wedges. In saucepan, place sugar and vinegar. Tip spices in bag, add to vinegar/sugar mixture, and then bring it to a boil.
Boil for about 5 minutes. Add peaches and continue cooking for another 5 minutes. Remove spice bag. Pack peaches into sterile jars and fill with hot syrup. Seal. Makes 4 pints.
