Squash bars

Ingredients

4 | Whole Eggs, Beaten | |
½ | cup | Shredded Cheddar Cheese (More If You Like) |
½ | cup | Onions, Chopped |
2 | tablespoons | Parmesan Cheese |
1 | cup | Bisquick® Baking Mix |
2 | tablespoons | Parsley, Chopped, Dry |
½ | teaspoon | Salt |
½ | teaspoon | Oregano |
½ | teaspoon | Garlic Powder |
½ | cup | Oil |
3 | cups | Squash, Finely Sliced |
Directions
In a large bowl, beat the eggs. Add the remaining ingredients, except the squash. Stir until well blended. Fold in the squash & mix well. Pour into a well greased 9x13x2 baking pan and bake in a 350 degree oven for35-40 minutes or until top is light brown. Let cool about 10 minutes and cut into bars of desired size. These reheat well in the microwave.
NOTES : Good with either zuccini or yellow squash.
