Squash bars

Ingredients

Quantity Ingredient
4 Whole Eggs, Beaten
½ cup Shredded Cheddar Cheese (More If You Like)
½ cup Onions, Chopped
2 tablespoons Parmesan Cheese
1 cup Bisquick® Baking Mix
2 tablespoons Parsley, Chopped, Dry
½ teaspoon Salt
½ teaspoon Oregano
½ teaspoon Garlic Powder
½ cup Oil
3 cups Squash, Finely Sliced

Directions

In a large bowl, beat the eggs. Add the remaining ingredients, except the squash. Stir until well blended. Fold in the squash & mix well. Pour into a well greased 9x13x2 baking pan and bake in a 350 degree oven for35-40 minutes or until top is light brown. Let cool about 10 minutes and cut into bars of desired size. These reheat well in the microwave.

NOTES : Good with either zuccini or yellow squash.
