Turkey meatballs in tomato wine sauce^

Ingredients

1 medium Onion, sliced
2 cloves Garlic, minced
2 cups Chicken stock
tablespoon Cornstarch
1 can (8oz) chopped tomatoes,
Drained, no salt added
1 pounds Ground turkey
2 slices Whole wheat bread, torn
¼ cup Whole wheat bread crumbs
1 teaspoon Onion powder
1 teaspoon Garlic powder
1 teaspoon Low sodium soy sauce
1 Egg white
1 Bay leaf
1 teaspoon Low sodium soy sauce
teaspoon Dried thyme
¼ cup Dry sherry
2 tablespoons Tomato paste, no salt added
½ teaspoon Dried thyme
½ teaspoon Dried basil
¼ cup Chicken stock
¼ cup Tomato sauce
dash Pepper
½ medium Onion, minced

Directions

MEATBALLS

Saute onion and garlic until soft in a bit of stock. Combine cornstarch and 2 tablespoons stock and set aside until needed.

Combine garlic and onion with the rest of the sauce ingredients and bring to a boil. Reduce heat and simmer over low heat 5-7 minutes.

Stir in the cornstarch and cook until thickened, stirring. Combine meatball ingredients and cook in sauce 30-45 minutes until done.
