Wine sauce fluke

2 | pounds | Skinned fluke fillets |
1½ | teaspoon | Salt |
dash | Pepper | |
3 | eaches | Sliced tomatoes |
½ | teaspoon | Salt |
dash | Pepper | |
2 | tablespoons | Butter |
2 | tablespoons | Flour |
½ | cup | Milk |
⅓ | cup | Dry white wine |
½ | teaspoon | Crushed basil |
Parsley for garnish |
Directions
Sprinkle both sides of fillets with salt and pepper, and arrange in single layer in greased baking dish. Place tomato slices over fish, sprinkle with salt and pepper. Melt butter in saucepan and blend in flour. Gradually add milk and cook, stirring constantly, until thick and without lumps. Remove from heat and stir in wine and add basil.
Pour sauce over the tomatoes and bake at 350 degrees for 25 minutes or until the fish flakes when tested with a fork. Sprinkle with parsley and serve. Submitted By JOY VERA On 01-07-95
