Zesty cod fillets

1 | medium | Onion; thinly sliced |
1 | Clove garlic; minced | |
1 | can | (14 1/2 oz.) whole tomatoes; drained, coarsely chopped |
1 | cup | Chicken broth |
¼ | cup | Dry white wine |
½ | teaspoon | Dried thyme |
1 | teaspoon | Salt |
½ | teaspoon | Black pepper |
4 | Cod fillets | |
½ | pounds | Fresh spinach; cleaned, stems removed |
Directions
Heat oven to 350.
Heat oil in nonstick skillet. Add onion and garlic; cook until onion is very soft, 5 minutes. Add tomatoes, broth, wine, thyme, ¼ teaspoon salt, an ¼ teaspoon pepper, simmer, uncovered, until sauce is reduced and thickened slightly, 5 minutes.
Season fish with remaining salt and pepper. Place in 13x9 inch baking pan.
Add sauce; cover.
Bake in 350 oven 14 minutes. Add spinach to sauce around fish. Bake 5 minutes or until fish flakes.
